Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 garlic cloves, minced
- 500g ground beef
- 800g crushed tomatoes
- 400g kidney beans, drained
- 400g black beans, drained
- 2 tbsp tomato paste
- 1 cup beef broth/stock
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp oregano
- 1 tsp coriander powder
- 1/4 tsp cayenne pepper (or more to taste)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp sugar
- 2 tbsp cocoa powder (optional but recommended)
Instruction
- Heat oil in a large pot over medium-high heat. Add onion and capsicum and cook for 5 minutes until onion is translucent.
- Add garlic and cook for 30 seconds until fragrant.
- Add beef mince and cook, breaking it up with your spoon, until it changes from red to brown.
- Add remaining ingredients: crushed tomatoes, kidney beans, black beans, tomato paste, beef broth, cumin, paprika, oregano, coriander, cayenne pepper, salt, pepper, sugar and cocoa powder (if using).
- Stir well, then bring to a simmer. Cover, reduce heat to medium-low and simmer for 20 minutes (or up to 2 hours for even better flavour).
- Remove lid and cook for a further 10 minutes to thicken the sauce. Adjust salt and pepper to taste.
- Serve over rice, with corn chips, or with your favorite toppings like sour cream, grated cheese, and fresh cilantro.
