Making the Panna Cotta

  1. Dissolve the gelatine in a bowl of cold milk.
  2. Add sugar, cream, and vanilla and bring to a near boil. Just a tiny bit of sugar is fine, but you can taste it without.
  3. Once it's warm, cool slightly and pour into molds. (1 L for 10/12 red and all violet molds)
  4. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Making the Raspberry Topping

  1. Mix the raspberries with sugar and water in a saucepan.
  2. Add finely chopped mint leaves.
  3. Simmer for 5 minutes, until the berries disintegrate.
